Kalkandu / Rock sugar Pongal with an Award.

Here comes the recipe........




For this pongal you need


Raw Rice – 1 cup
Moong Dal – ¼ cup
Milk – 3 cups
Kalkandu / Rock Sugar – ¾ cup
1 tsp. of crushed Cardamom
A pinch of colouring powder
5 tsp. of ghee.
Few nos. of cashews (Roast them  in ghee and keep it aside)




Preparation

Wash Rice and Dal.

In the pressure cooker along with rice, dal,one cup of water and milk, cook them well in a low flame.
(If the rice is not cooked well. Then when you are adding in the Kalkandu syrup, they will not mix well they will stand separate. So make sure the rice is cooked well).

In a pan,add the kalkandu with sufficient water and keep stirring until it dissolves completely.

Now add the well cooked rice to it .

Add the crushed cardamom along with the kesari powder and 4 tsp. of ghee and mix them well.

Until you get a thick consistency, keep stirring…

Finally garnish them with cashews.
