SODHI KUZHAMBU- STEP BY STEP
This is an unique recipe of Thirunelveli. I have already mentioned about this Kuzhambu in my Inji Thuvaiyal post.
The main ingredient for this kuzhambu is coconut milk,the vegetables are cooked in coconut milk along with cooked moong dal and grinded paste.
Now start preparing your coconut milk and the rest is going to be easy . You will definitely enjoy this Kuzhambu as much as we did.
Serve this kuzhamku with hot rice and this combination pairs up very well with Inji Thuvaiyal, Potato Curry as side dishes :)
For this kuzhambu you need
1 cup of Moong Dal
3 cups of coconut milk (extracted from 1 big sized coconut)
1 medium sized carrot
1 medium sized potato
1 cup of Moong Dal

1 medium sized potato
1 drumstick
Few nos . of beans and Saber Beans
1 Brinjal
1 medium sized onion
1 green chilly(split it lengthwise)
1 small sized Lemon (extract the juice from it)
Salt
Oil
For Seasoning
1 tsp. of mustard and urad dhal
A sprig of curry leaves
For Seasoning

For Grinding
1 tbsp. of grated coconut
2 nos. of red chillies
2 tsp. of coriander seed
Grind them to a paste by adding little water.
Preparation
Chop the vegetables and keep it aside, prepare the coconut milk.(If you have any doubts regarding how to prepare coconut milk,let me know)
Heat oil in heavy bottomed vessel, add the chopped onion and green chilly. Saute it
Add the chopped vegetables and saute it for 5 mins.
Now add the THIRD milk to these vegetables.
Cover and cook until the vegetables get softened.
Now add the SECOND milk along with the cooked moong dal and the grinded paste, mix them gently.
Allow it to boil in a low flame and keep stirring in between, when the raw smell of the grinded paste gos off ,add the FIRST coconut milk.
Gently mix it well.Add salt and allow this to boil for about 2 mins.
Sodhi Kuzhambu is ready,now comes the final part temper it with the seasonal ingredients.
Allow it to cool and add the lemon juice.
Tasty Sodhi Kuzhambu recipe is ready to be served.....
Serve it with hot rice rice and enjoy.......:)
NOTE:
Don't skip the lemon juice, as it enhances the taste of this dish.















This recipe is very new to me, never tried it before Will definately give it ago but I dont under stand how to get the three stages of coconut milk, never used fresh coconut before.I can get dry dessicated coconut in UK.
