BEETROOT PORIYAL


BEETROOT PORIYAL  -  A simple and sweet stir fry,quite easy to prepare. Beetroot is a vegetable, that hardly needs any cooking at all and as I have finely shredded , it takes very less time to be cooked.Serve this tasty stir fry as a side dish with rice and enjoy :)

 Preparation time : 10 mins
Cooking time : 10-15 mins
Serves :  2 


For this poriyal you need

1 big sized beetroot, washed , peeled and grated
1 medium sized onion
A pinch of turmeric powder
2 tsp. of grated coconut
Salt
Oil
For Seasoning

1 tsp. of mustard seed
1/2 tsp. of urad dal
A sprig of curry leaves
2 red chillies

Preparation
Heat oil in a pan.Add the mustard seeds, when they crackle, add the urad dal, curry leaves, red chillies and fry for a min.

 
Add the onion and fry until soft. 

 
Tip in the grated beetroot and continue stirring for few more mins.

 
Add the turmeric powder and salt , mix well. Sprinkle little water .

 
Cover and allow it to cook on low heat until the veggie is done.
Finally add the grated coconut,mix it gently  and serve warm.
Beetroot Poriyal is ready to be served..............



Serve this healthy beetroot stir fry with rice and enjoy :)
