RED AMARANTH STEM SAMBAR - Hello Friends, Today I am sharing a healthy and wonderful recipe with Amaranth. As we all know,keerai (Tamil) or greens are a good source of nutrients, loaded with lots of health benefits I would definitely suggest taking greens regularly or at least twice a week.

There are a lot of recipes that can be done with the leaves, but do you know even its stem can be cooked as well. Yes, friends today I am sharing a Sambar with it. SAMBAR is a staple food in SouthIndia, which can be prepared with different vegetables, and also there are quite different versions belonging to different states as well.

Now here comes an evergreen hit combination, sambar with drumstick and brinjal.

Sambar with the stem of Amaranth is definitely healthy and not to mention is delicious too. Her comes my way of preparing it. so lets get started.
First step: In a pressure cooker, add the lentils, (1 cup of toor dal + 2 tbsp. of moong dal) wash them well, and then add sufficient water along with turmeric powder, cumin seeds, crush and 2 garlic cloves, and a tsp. of sesame oil. Allow it to cook for 4 -5 whistles. Remove from heat. When the pressure is released, mash the dal well and keep it aside.
Second step: Prepare the vegetables needed for the sambar. Slice the onion,roughly chop the stem and tomatoes.
Third step: In a heavy-bottomed pan add oil, when it turns hot add mustard seeds after it stops spluttering add urad dal along with curry leaves, and asafoetida. Saute for a minute.
Fourth Step: Now add the onions along with little salt, when it turns translucent add the chopped tomatoes and saute for a couple of minutes.
Fifth Step: Tip in sambar powder along with turmeric powder, give it a quick stir. Add sufficient water. When it comes to boil add the stem along with salt.
Sixth Step: When the amaranth stem turns soft, add the tamarind water. Allow it to boil for couple of minutes.
Seventh Step:Finally add dal, allow the sambar to boil for about 5-10 minutes. Garnish with fresh coriander leaves, remove from heat and serve it hot.

A healthy and nutrition Sambar with amaranth stem and lentils.
Ingredients
- 1 cup of toor dal + 2 tbsp. of moong dal, cooked and mashed
- tamarind extract - (extracted from gooseberry sized tamarind)
- 1 onion - sliced
- 2 tomatoes - roughly chopped
- Amaranth stem - roughly chopped
- 1/2 tsp. of turmeric powder
- 1 1/2 tbsp. of sambar powder
- Oil
- Salt as required
For Seasoning
- 1 tsp. of mustard seeds
- 1/2 tsp. of urad dal
- A sprig of curry leaves
- A pinch of asafoetida
Instructions
- In a pressure cooker, add the lentils, wash them well and then add sufficient water along with turmeric powder - a pinch, cumin seeds, 2 - crushed garlic cloves, and a tsp. of sesame oil. - When the stem turns soft, pour the tamarind extract and allow the sambar to boil for about 5-10 minutes.
- Finally add the dal. Allow the sambar to boil for couple more minutes. Garnish with fresh coriander leaves, remove from heat and serve it hot.
